Sprouting.

This could be one of the easiest and the hardest thing to do: sprouting. By far it is not generally time consuming but it can be so rewarding. It seems that, out there, there are multiple combinations to make the right combination for the growth of a Seed. One could say it would take the correct amount of Air, Sun, Earth and Water. Too much Water and a seedling will drown, too much Sun and it can dry, not the right medium and it will not show up, a little Wind and the Sprouting can go flat on the ground to never recover. However a lot of us can remember the Cress Head from our Childhood. It implied just a hollow Egg Shell, either Cotton Wool or Earth, some Seeds, usually Watercress and making a face upon the Egg little container...

The Egg Face Pots. This was an educative way to teach a Child to grow something. Of course the Cress represented the hair of the little face upon the Egg. I do still find that method a cute manner to introduce to Children than growing from a Seed can be easy.

However if the humble Watercress is still very much in use for those Egg Heads if I may say another trend did appear for trying other Herbs in a Micro Fashion. But it is fair to say that the Watercress paved the way for all the others Herbs. Because it taught us that small didn't mean to be not strong on flavour on the contrary.

Watercress. Sprouting, Watercress had an excellent pepperiness to many dishes. Let's remind us here of the Eggs and Cress Sandwich.

Of course a Watercress can be let to grow and not cut short but the discovery was there: Herbs do have a strong flavour during their growing stage. Yes, we can all wait for the full Herb to mature up but in its Micro form, the taste is here, intense but it also add to the decoration of a Dish. When we all think a trend could have been born in schoolyards...
