A Selection of Ketchups

The history of Ketchup is a long one and it was first recorded in the 1600's. It was first made with Mushrooms and even Anchovies. However Anchovies were dropped later on.

Ketchup became a trend from the eighteen century. Another name for it was Catch up. The Mushroom one was popular and the Anchovy became the ingredient of a Paste of its own enjoyed by Gentlemen. Ketchup caught up in America.

Many variations were created of Ketchup. Walnuts are used to make Ketchup from a long time and the ancient original recipes had Anchovies within them but also some nowadays which are keeping the tradition alive. You can find a recipe for it from Mrs Beaton cookbook.

Walnuts can make a very nice Ketchup.

But Tomato Ketchup was first mentioned in 1817. But I dare say it must have been known and created beforehand or a sauce similar to Tomato  Ketchup... But there I am all assuming so don't take my word for it. Using Tomatoes in Ketchup was also said in 1812. But it was not as a Tomato Ketchup as per say. Thomas Jefferson's Cousin, Mary Randolph wrote a book who was very influencial describing how to sweeten their Ketchup using Tomatoes.

 Tomatoes are Sweet but somewhat slightly acidic at the same time.
