A Selection of Oyster Sauces

Oyster Sauce was formely created in 1888 by Lee Kum Sheung. The beautiful story of it is that like the Tarte Tatin it was a mistake which people did like very much. So much so that it has been used the world over ever since. Of course initially it does come from one ingredient: The Oyster.

The story goes that Market stall Man Lee forgot about his simmering Oysters on the stove during his lunch break and came back to a caramelised brown sauce that used to be Oysters... It tasted very nice and he made a fortune out of it subsequently. So much so that Oyster is now a staple in a Chinese Cupboard but also in many condiment cupboard all over the world.
