Celery.

In my point of view it is an essential Vegetable, one we could call a staple. It is usually in my fridge every week. The matter is not that I can not live without it, but that I'd rather have it than not, if you know what I mean.

First I would mention that you can eat Celery raw. Of course you do need to wash it thoroughly first to get rid of any residue of pesticide if you are unsure there were any. Second when you eat a Celery Stick just like that you have the full crnchiness of it. I dip Celery in a variety of Dips: Chive and Sour Cream, Guacamole, Hummous, and or Tomato Salsa.

Celery and Carrots Sticks with a Hummous Dip (And a Pinch of Paprika, a little dash of Cayenne Pepper and some Pumpkin Seeds)

Carrots are the perfect partner in crime of Celery. Add Leeks or Onions and then you have what we call a 'Trinity', a Trio of Veg which could serve as a strong base for a Stew, Casserole, Stock or a Soup. It is full colours and most importantly flavours.

For me when I cook a Stew, I hardly consider it to be without Celery. It plays an important part to impart depth to a Stew or to add richness to a Sauce.

Of course you can use Celery fully to do a very lovely and stand out Celery Soup. For the front, the little herby shoots, leaves, on top a Celery they are not to be discarded. They can also be used for decoration and flavours.
