A Selection of Celeriacs

Celeriac isn't the most pretty and glamorous Root Veg around but think twice why Celeriac is found in fine dining restaurant? It is because it does taste nice but its versatility makes it an all rounded Vegetable (No pun intended).

You can even have Celeriac for a substantial Breakfast but as it requires some preparation you can prepare in advance a batch of 4 or 6 Potato and Celeriac Rosti to place in a freezer to use when you want like early morning. You can flavour your Celeriac and Potato Rostis with Fennel Seeds, a little pinch of White Pepper, and a teaspoon of Chilli paste. In the morning you can fry your rostis and add a fried Egg on top.

A Chilli Paste is handy to give a lift and a little kick to a Rosti.

Cubed Celeriac can also be used to do a nice Brunch. You can create a very decent Celeriac Hash dish with it. The Celeriac is a Root Veg which you can treat like a Potato. It has a mild taste and an earthiness to it which is somewhat comparable to Potatoes but more delicate.

Diced Celeriac. Its flesh is slightly paler than the one of Potatoes. 

For the Hash you can use Salted Butter and a drop of Rapeseed Oil to prevent the Butter from burning, add your diced Celeriac in the frying pan and let it pick some colour. A chopped White Onion then goes in with a minced Garlic, and some thick Lardons. Give everything a good stir and some seasoning, Sea Salt, cracked Black Pepper, chopped Parsley then after a couple of minutes to five minutes add some Spinach which will wilt fast enough. A pinch of Nutmeg will not go amiss and add to the flavour of the overall dish. Last but not least if you make some hollow space in the frying pan you can cook some Eggs for a proper satisfying Brunch.

For a Hash Eggs do complete the dish with their rich Yolk.

As for Supper, Celeriac is a very nice ingredient for a Soup. Using a chopped Onion, minced Garlic, a Leek, a couple of Celery Sticks, to accompany the Celeriac you can get to a very decent Soup. Of course you will need a lovely consistant stock, either Chicken or Vegetable one, and to make it velvety Double Cream. But also seasoning to go with your own taste buds. White Pepper goes well with Celariac but also Herbs, like Rosemary, Thyme or Chives. For decoration it is really all about inspiration or what is ticking your taste buds. I went for fried Beef strips and Chives on the picture for one of my Celeriac Soup but you can use Bacon, Croutons, or nicely rendered Scallops...

If we think about Dinner I will tell you about a little number using Celeriac which is a comfort food one but I would say is rather a midweek Dinner: It is a lattice Pork Pie with Celeriac and Leeks. Celeriac works well within numerous savoury Pies. It is a versatile Veg like the Potato.

Now Celeriac can also be used as a Side. From Celeriac Chips flavoured with Celery Salt, White Pepper and chopped Parsley to a Creamy Celeriac Mash with Celery and a little Grainy Dijon Mustard, passing by a Celeriac  Gratin which can warm a cold day... What is to be said is that an Eulogy can be uttered for the humble but delicious Celeriac as he enter our palates, for it is a Vegetable most welcomed upon our plates.
