Those Beef Skewers are lean but do pack a punch in terms of flavours. Because they are marinated for a while overnight and are also served with a Spicy Sauce and Dips. Grilled, barbecued or griddled along with Baby New Potatoes Skewers, they make a perfect Mid Week Dinner, or a Saturday One. Leisurely pleasurable.

Spicy Beef Skewers with Baby New Potatoes
Timing
  • Preptime: 20 to 30 minutes + 24 hours marinating.
  • Cooktime: 20 to 30 minutes.
  • Servings: 4 portions
Ingredients

4 lean sizzler frying Beef Steaks.

A bunch of Spring Onions.

Sesame Seeds, a handful or two.

Dark Soy Sauce, 200 ml.

Mirin, 100 ml.

Rice Wine Vinegar, 50 ml.

Honey, 2 Tablespoons.

Terryiaki Sauce, 150 ml.

Chilli Flakes, 1 Tablespoon.

2 Red Chilli Peppers.

2 Sweet red or yellow Sweet Bell Peppers.

Tomatoes 12.

Baby New Potatoes, 32.

A bunch of Coriander. Chopped.

Light Soy Sauce 250 ml, give or take for a dip.

Soft Brown Sugar, 1 Tablespoon. Taste and try. Optional.

Szechuan Pepper, crushed.

Smoked Sea Salt.

Garlic Cloves, 2 Crushed.

 

 

 

Steps

First prepare the Marinade for the Beef. Put the Dark Soya Sauce, the Mirin, a little Terryiaki Sauce, the Rice Vinegar a drizzle of Honey in a medium to large size Bowl. It should be sweet but also a little salty. You can adjust the sweetness by carrafully adding the Brown Sugar.

Crush the Garlic Cloves, there is no need to peel them but I prefer to do so nonetheless, add them to the Marinade along with the Chillli Flakes.

Slice a Red Chilli and make it join the other Ingredients of the Marinade. Crush some Szechuan pepper to impart some more warmth and spiciness to the Beef Marinade.

Chop some of the Spring Onions and add it to the Marinade along with a Pinch of Smoked Sea Salt. Finally finish with a decent amount of Sesame Seeds. Your Marinade is then ready to be used after whisking it a little. If you want the taste of Sesame to be alittle proheminent, you can add a drizzle of Sesame Oil, it is optional.

Then for the Beef, cut the four Sizzler thin Steaks lenghtway into strips. From one Steak you should be able to get about four decent size Strips. Place the Beef Strips in the Marinade, cover with cling film and the bowl is ready to go in Fridge overnight: The longer the better to impregnate the Beef with all the Flavours.

 The Spicy Marinade.

The following day, put a pan of Water with a pinch of Salt upon the Stove to part boil the Potatoes. This should take 15 minutes. Meanwhile in a bowl of Water soak your wooden Skewers to prevent them from burning went they will hit the heat of the Griddle Pan, BBQ, or Grill.

Prepare a little Tomatoes and Sweet Peppers Salsa for the Beef and the Potatoes Skewers. Put your Tomatoes in a bowl, whole, and drain the hot Water of the Potatoes over them. Set your potatoes aside to cool a little before you can handle them. Shock your Tomatoes by draining the Hot Water and replacing it by Cold Water. It will crack and blister the skin of Tomatoes and render them easier to peel. Let them cool of a little before handling them in order to remove the skin off. Then chop your Tomatoes in very little pieces and set aside in a medium size bowl.

Proceed with a similar technique for the Sweet Bell Peppers using the Hot Water of a boiled Kettle instead. Once cooled remove the skin of the Peppers. It will be slightly harder to peel. Chop very thinly the Sweet Bell Peppers making sure you remove all Seeds. Add the pieces of Peppers to the chopped Tomatoes.

Slice some Spring Onions. Add half of them to the Salsa and keep half to use in a dip of Light Soya Sauce, and Sesame Seeds, a drizzle of Sesame Oil, add a few drops of Rice Wine, and of Rice Wine Vinegar. Add some Cracked Szechuan Peppers. Chop a Red Chilli, add half in the Soy Dip and half in the Tomato Salsa. Finish the Dip and the Salsa with Chilli Flakes (optional), a touch of Brown Sugar, and for the Salsa a pinch of Smoked Sea Salt, finally chop some Coriander and put some in the Salsa and some in the Soya Dip.

Drain the Skewers from their soaking Water. You can keep the Water in a Jug to use for watering House Plants the following day. Now that you have your Dip and Salsa  place them upon the Dinning Table out of the way, for it time to concentrate on the Beef Skewers and the Potatoes ones. You are looking at serving 4 Beef Skewers per person, and 2 of the Potatoes one for each Guests.

Pre-heat the Grill, and prepare the Baby New Potatoes Skewers. They will take longer than the Beef to cook thoroughly for the aim is to render the skin of them ever so crispy. Place 4 small Potetaes on each Skewers then place them under the Grill. Don't forget to turn them over every now and them to render them on all sides.

Then prepare your Beef Skewers with one Strip of Beef upon each of them. Arrange the Strips of Beef in a wavy fashion. Put a drizzle of Honey on each Skewers, but also a drizzle of Terryiaki Sauce (thick one) then finish with a Sprinkle of Sesame Seeds. Put a Griddle Pan upon the Stove then cook the Beef Skewers. By doing them in batches it is easier not only to turn them around regurlarly but also like any Meat to rest the Skewers once cooked batch after batch. By the time all the Beef Skewers are ready place them on the 4 warmed Plates.

Add the Potatoes Skewers by the sides of the Beef Skewers, decorate alittle chopped Coriander. Make sure you don't forget to turn off Grill and Stove. Then serve and enjoy with everyone the Fruits of your Labour. Leave each person to help themselves to the Tomato and Sweet Pepper Salsa but also the Dip. I have individual little sauce dishes, about a dozen of them which are so useful. I found them in a Chinese shop in Chinatown, near Leicester Square, London. They are ever so practical for such evenings and can only recommand for anyone to procure themselves with such kind of handy set.

There is no real season to particurlaly eat them for it  are is a year rounder of a Dish. However if you want to celebrate Chinese New Year, this recipe is nice to have in your repertoire.
