Traditional Fig Pudding.

Of course Christmas is the season of the Pudding par excellence. It is traditional down to a T. The Pudding is a semi-sphere full of fruity goodness which marks the end in a beautiful blue flame the end of a joyful day. There is excitement in the air when the Christmas Pudding is brought into the room to then be deposited upon the table. Smiles, jolly spirits and the anticipation to see the Cognac burn.

The fact is the Christmas Pudding takes time and great care to prepare. Traditionally, it is done or started way in advance during the year. Mid August I was told. Another tradition which endure but not consistently any longer is the one of putting a coin at centre of the Pudding.

Nowadays if the Christmas Pudding remain the centre stage, it did change somewhat with time, from inspiration to inspiration, Oranges were added or a little of this and the let's not try that... The initial concept of the Christmas Pudding serve as a base for many other which are a tad different.

However the Christmas Pudding moment always ignites the culmination of the Festivities.
