This is an easy recipe however it demands a little care. It is a fast and tasty dish upon the table. If you do enjoy mussels this one is a treat. The sweetness of the Mussels associated with the acidity of the White Wine makes a true winning pair upon one's palate. 

Putting it all Together
Mussels in White Wine Sauce.

  • Servings: 2-4 portions
Ingredients

1kg of Mussels.

1 bunch of Curly Parsley.

3 Echalion Shallots. Chopped.

2 Garlic Cloves. Chopped.

Some chopped Chives.

400ml of single Cream.

200ml of White Wine (Sauvignon Blanc).

Salted Butter.

Black Peppercorns.

Smoked Sea Salt.

1 Baguette.

 

Steps

The first steps is the preparation, washing and cleaning of the Mussels. Keep them in salted Water to open up. Any Mussels which do not open are not very fresh therefore can be discarded.

Peel the Shallots and the Garlic Cloves. Then chop them very thinely.

Chop the Parsley and the Chives. 

Give a last scrub to the Mussels to make sure there is no beard upon them, algae... nor sand within them or baby Crabs.

Heat a wide edge frying pan on the hob (like a skillet or a wok or to be precise a Poele à Moules). Put a knob of Butter to melt within it. A little drizzle of Oil within will prevent the Butter to burn.

Add the Shallots and Garlic to the pan. Stir.

Slice the Baguette. Put it in the oven if you want eat crispy. Butter each slices, add Garlic or rub some Garlic on every slice, then add a little Parsley for good measure to get a good Garlic Bread out of the oven.

Put your cleaned Mussels in the Pan. Wait a minute or two before adding the White Wine to deglaze the pan.

You can cover the pan to let the steam to cook the Mussels but also to reduce the Wine.

Add the Cream and the Herbs and seasoning then give everything a good gentle stir. Put the lid back on. Within 5 to 7 minutes the Mussels will be ready.

Serve the Mussels in bowls which can hold the creamy White Wine Sauce but also with the crusty bread to dip into the sauce. Then just enjoy.
