This is a very simple and easy to put in the oven Chicken dish. It does require just a little care to make sure the Ingredients are cooked. However it is a late Summer Dish when you start to feel that the temperature is getting lower, slowy. It is still getting the reward of Summer with the Tomatoes and welcoming Autumn with the Mushrooms.

  • Preptime: 10-15 minutes. Assemblage.
  • Cooktime: 30 to 40 minutes

Ingredients

4 Chicken Breasts, with skin or without.

Plum Tomatoes 800 g or 2 tins of Plum Tomatoes in their juices.

Some Capers to your liking.

Chestnut Button Mushrooms, a handfull or 250g to more.

Two Garlic, peeled and chopped.

New Potatoes 750g to 1kg, give or take.

A good knob of Butter. A dash of Oil of your choice. Olive Oil is what I use.

Chopped Parsley and some Thyme.

One chopped Chilli, deseeded. I tend to go for the Espelette one or the Cayenne, a red one to blend with the Tomato Sauce.

Seasoning: Sea Salt and crushed Black Peppercorns.

One sliced Aubergine/Eggplant.

Steps

The first step is to preheat the oven to gas mark 6.

Prepare the deep baking tray with a little Olive Oil.

Seasoned your Chicken Breasts. Then put them and the baking tray in the oven. Ten minutes on one side and ten minutes on the other side.

Meanwhile part boil your Baby Potatoes for about ten minutes.

Meanwhile prepare your Tomato Sauce with a little Olive Oil in a pan, and put in your chopped Garlic. You can add a chopped and peeled Shallots for more flavour.

Put in the chopped, deseeded fresh Chillies and the Plum Tomatoes, fresh and quartered or in tin.

After five minutes or there about, add the Seasoning for the Sauce and the Capers.

Drain the Potatoes.

Check the Chicken if they are rendenred or moist (the way you like it) then put them back in the oven with the Tomato Sauce, the chopped Herbs and the Mushrooms.

Put the Potatoes in a frying pan with salted Butter, a little Oil and chopped Parsley, and sautéed them. 

Within 20 to 25 minutes everything will be ready.

It will be time to serve. 2 Chicken Breasts per person, a good amount of Tomato Sauce, buttered New Potatoes and here is a nice Dinner.
