Simple and summery, this is a BBQ Dish par excellence. It is just luscious but not ostentatious. The grilled diced Lamb speaks for itself as per say. The Med' Vegs bring the Skewers to that enjoyable Summer BBQ evening level. 

Putting it all Together
Lamb Skewers.
Timing

Ingredients

800g to 1kg of diced Lamb. (Neck or Steak)

2 to 3 Red Sweet Bell Peppers, deseeded and chopped.

2 Red Onions, peeled and chopped in square chunks.

About 36 to 40 Cherry Plum Tomatoes.

A bunch of Basil.

Lambs Lettuce.

French or Italian Vinaigrette.

 

Steps

First it is all about dicing and chopping. For the Lamb, you can get cut of Meat like Lamb Steaks, Neck of Lamb or both. You can also get already diced Lamb in a Shop or a Butcher. The cubes of Lamb need to be consistent enough to be skewered. The size needs to be roughly give or take 4 cm on each sides. Well we can say maybe the length of a thumb.

Meanwhile if using wood skewers, they need soaking in Water for a little while. It will preserve them from burning under the grill, or while griddling, or while barbequing.

Marinating the Lamb diced can help with flavour but also to tenderise it a bit. With Lamb, I often use just simply the juice of a couple of Lemons and black Peppercorn. Not much and not for too long, but long enough for the Meat to get some flavour but not to cook by the acidity. Ten minutes is a give or take.

This give you time to care about the other Ingredients. Peeling and chopping the Red Onions. Deseeding and chopping the Red Sweet Bell Peppers in squares.  

Then it is time to prepare the Lamb Skewers. It is a matter first to heat and bring to the right heat your grill, griddle pan or your BBQ.

The next step is to put Ingredients upon the skewers in an alternate manner like Lamb cubes, Red Onions, Plum Cherry Tomatoes, Red Sweet Bell Peppers.

Put the Skewers to the medium you want to cook them upon, may it be the grill, the BBQ, or the griddle pan. 

Prepare your Vinaigrette if it is not shop bought.

Place the simple Lamb's Lettuce Salad to be the bed for the Skewers. Drizzle with your Vinaigrette. Keeping an eye on the Lamb Skewers.

You are looking to give two to three Lamb Skewers per person.

Then just serve upon the light Salad and enjoy.
