There is nothing complicated in doing Pigs in Blanket. It is very simple but I dare say the importance is to choose good Ingredients and to care for them to get a good result. In this house we do love Pigs in Blanket however we do reserve the moment to do them for special occasions, like the Festive Season, Birthdays, Parties and BBQs. It is just to keep the Pigs in Blanket special. Then we do ring the Farm to get our Ingredients because to know the provenance of products is ever so important. Made at home those Pigs in Blankets feel like a true indulgence.

  • Preptime: 10-15 minutes. Assemblage.
  • Cooktime: 25 to 35 minutes
  • Servings: 2-4 portions
Ingredients

12 to 24 Chipolatas Sausages.

24 Bacon Rashers, Smoked or unsmoked, with a reasonable but indulgent thickness.

2 to 4 TableSpoons of a delicious Honey of your choice (for me it is Pine Honey in the Cold Days and Orange Blossom Honey in the warm Days.

Dips:

-Grain Dijon Mustard and Mayonnaise mixed together, or what we call a Dijonnaise.

-Creme Fraiche with chopped Chives and a roasted Clove of Garlic chopped.

-Tomato Salsa: Home Made with Tomatoes, Shallots, Chilli, dash of Olive Oil, dash of Red Wine Vinegar.

-Guacamole: Avocado, Tomato, Chilli, Coriander, Lime.

-Blue Cheese Dip: Roquefort Cheese, Creme Fraiche whisked together.

-Onion and Green Tomato Chutney.

Sides:

-A large Salad bowl of Lamb's Lettuce, Pea Shoots, Watercress and Rocket.

-In Summer BBQ small Potatoes as well.

-In Winter a rustic baked Camembert or round baked Brie.

 

Steps

Preheat your oven at gas mark 5.

Prepare your Baking Tray with a little Oil of your choice. It does prevent the Sausages to stick.

Wrap your Chipolatas carefully with the Bacon Rashers. Place them side by side in your baking tray.

Drizzle lavishy with the Honey of your choice.

Put in the oven but do not forget to turn the Pigs in Blanket around half way through the cooking.

Prepare any dips you would like to have with your Sausages in the meantime.

Then it is all about a potential side. You can keep it simple because the peppery Chipolatas speak for themselves but a Salad never hurt anyone nor does the humble Potato.
