Mediterranean Salad

  • Preptime: 15-20 minutes. Assemblage.
  • Cooktime: 5 Minutes to 10 Minutes if needed
  • Servings: 2-4 portions
Ingredients

1 Radicchio

2 Gem Lettuce, Frisée Salad or Heart of Romaine.

2 Courgettes (Zucchini) diced or sliced. (Yellow, white or green)

2 Sweet Bell Peppers. Go for colours, one red and one yellow or orange.

250 g of Tomatoes. Chopped in half. Same as above go for colours and varieties.

1 Aubergine/Eggplant, griddled then sliced.

Balsamic Vinegar and Olive Oil Dressing.

A handful of Basil Leaves.

2 chopped large Spring Onions.

Seasoning.

Optional: Black Olives, Feta Cheese, Red Onions.

 

 

 

Steps

The steps to do the Salad are fairly simple. It is a matter of cleaning the Ingredients, chopping them to then assembling them into a delicious and fresh summery Salad. It is really that easy. 

You can present the Salad in individual plates which can give you the time to present all of them with some sort of decorum. Or you can go for a large Salad Bowl or Platter where everyone choose what they want. That way it is just convivial.
