This Cucumber Side is not from me but I tried it and twicked this recipe from a Sainsbury's Magazine. I can tell you that it is well nice and worth to add to your repertoire of handy recipes to know about. Simple, fresh and effective this is a Side to Remember to accompany Asian style cooked Meat or Fish. I think it does work better with Fish, Seafood, and Chicken.

  • Servings: 2-4 portions
Ingredients

Cucumber, 2, Sliced and deseeded.

Smoked Sea Salt, 1 tbsp.

Dark Soy Sauce, 3 tbsp.

Acacia Honey, 1 tbsp and a half.

Sesame Oil, 2 tsp.

Sesame Seeds, 1 tbsp.

Lime wedges to serve.

Optional: Coriander chopped, Chilli Flakes a tsp, Sezchuan Pepper a pinch, Black Sesame Seeds a tsp, 2 sliced Spring Onions.

Steps

The first step is to cut the two Cucumbers lengthway and to deseed them. Then slice them up either in diagonal or in a normal way. 

The following step is to remove the excess of Water within them which can be achieved by pouring Salt over the Cucumbers, and let them be set aside within the Salt for 20 to 30 minutes.

During that time you can prepare the Sauce, which is mainly composed of Dark Soy Sauce. The Light Soy Sauce is rather salty while the Dark one has more depth of flavour to it.

Add the Honey to the Sauce, a non set Honey. It needs to be runny. Choose the Honey you like. Personally, I think that Acacia Honey or an Orange Blossom Honey work wonders for taste.

Toasted Sesame Oil comes next. It gives a slight Nutty flavour to the Sauce but not overwhelmingly so.

Chop some Coriander then slice some Spring Onions. Set aside.

If you like it a little Spicy, add some Chilli Flakes to the Sauce or a sliced Red Chilli.

Whisk the Sauce gently together.

Drain your Cucumbers from their excess Water they did pour out. Return them into your serving dish. Pour the Sauce upon the Cucumbers and toss together with a lightly Holly Golightly Touch.

If using add the Spring Onions, Chilli Coriander and Szechuan Peppers. But most importantly do not forget to decorate with Sesame Seeds.

This is a rather simple Side to do but it is most excellent with Fish. I tried it not so long ago with Sea Bass Fillets. Although I did mess the skin of the Sea Bass because the frying pan wasn't hot enough. Anyhow it was a very decent Meal.
