This is a simple side which doesn't take a lot of time to do but delivers on flavours. Take the griddle pan to prepare your Courgettes to perfection. It brings up a very satisfying side to go along a main like Fish or Meat.

Griddled Courgettes Side Salad

Ingredients

Courgettes/Zucchini, 2 or 4.

Olive Oil. Infused with Garlic or with Chilli. 

Chilli, 1.

Garlic, 1.

Rockect Salad Leaves, 150g.

Cracked Back Peppercorns, a good pinch all over.

Sea Salt, a good pinch all over.

Optional: a Lemon, some fresh Mint leaves, Balsamic Vinegar.

Steps

The first step is to prepare the Courgettes. To peel them is not necessary for their dark green skin is appealing. Slice them lengthway in long strips of a consistant thickness of about 5mm to 1cm.  Brush the Courgettes with Virgin Olive Oil on both sides.

If possible a flavoured Olive Oil with either Chilli, or Garlic can deliver a real twist for this simple side. However adding Chilli Flakes, or a chopped dried Red Chilli and minced Garlic is a very welcomed option to put to the griddle pan with the Courgettes. 

Sprinkle the slices with Salt and Pepper.

While the Courgette slices are getting their griddling marks prepare the Rocket Leaves along with the Mint ones with a little drizzle of the flavoured Olive Oil. A dash of Balsamic Vinegar doesn't hurt. Prepare the plates with that impromtu Salad.

When your Courgettes are perfectly griddled on both sides, with the lovely zebra markings, it is time to present them on the simple Salad plates of Rocket and Mint and to present the Side of your main meal. To treat the Courgettes this way is fast but does deliver on flavour.
