Platter of Crudités

Ingredients

3 Courgettes to do the Courgettis.

1 Feta Cheese slab to crumble.

2 Handfuls of Black Pitted Olives.

24 Cherry Tomatoes,  to cut in half.

200g of Rocket Leaves.

100g of Smoked Pancetta Cubes.

2-3 Avocadoes, sliced.

Olive Oil and Balsamic Vinegar for the Dressing.

Steps

The first task is to do the Courgetti Spaghettis with the Courgettes/Zucchinis. A specific Mandolin or Pasta Machine will be required in order to do so.

Second will be to sauter the Smoked Pacetta Cubes if using.

Crumble the Feta Cheese and place in a bowl with a little seasoning and a drizzle of Lemon Juice.

Chop all your Cherry Tomatoes in half but be liberal, it can be cut in quarters. But they can also be any Tomatoes you love. 

Deal with the Avocadoes carefully. No one wants an Avocado hand. First it a slicing length way through the middle and a gentle twist and turn of the two halves to show the stone in the middle. Remove the stone preferably with a spoon.  Then peel the Avocadoes and slice them.

The rest is mainly assembling all the ingredients together upon a platter to make them look absolutely nice. And don't forget the Pitted Black Olives which add some saltiness to the platter and the Rocket Leaves for the pepperiness. 

Last but not least is to prepare a Dressing of your choice. I can only advise a Balsamic Vinegar and Olive Oil Dressing or one based upon Lemon Juice.

As for Seasoning Cracked Peppercorns and Sea Salt will do. But Chopped Meditteranean Herbs will also improve the Snack Platter: Oregano, Marjoram, Chervil, Basil.
