This is a simple Starter to put together. The Caprese is fresh and summery. It consists of three main Ingredients, seasoning and the simplest of dressing but is ever so enjoyable. The quality of the Ingredients is key to unlish those wonderful flavour they have together: Mozzarella, Tomatoes, Basil. Simple is delicious.

Ingredients

3-4 Tomatoes of your choice. (San Marzano, Marmande, MoneyMaker...)

2 Buffalo Mozzarella.

A Bunch of Basil.

Extra Virgin Olive Oil.

Balsamic Vinegar.

Black Peppercorns, crushed.

Sea Salt, crushed.

Optional: Dried Mixed Italian Herbs, Garlic Salt.

Steps

Drain your Buffalo Mozzarella if needed. Slice them up and arrange the slices upon your two plates. You are looking for one Mozzarella Ball per plate as a quantity. Placing them all around inside the edges of the plates give to the Salad a sense of design.

Second, quarter or slice the Tomatoes. Medium size Tomatoes are best for this Salad as well as red ones. It is an Italian dish with the three colours of the Italian flag after all: Green, White and Red. Green is represented by the Basil, White by the Mozzarella, and Red by the Tomatoes in this tricolore Salad.

You can deseed the Tomatoes but I will advice against it because you will then loose the juicy fleshy pulp which makes the dish work altogether. It is all about a balance of the sweet acidity of the Tomatoes and their texture but also the creaminess of the Mozzarella then the fragrant fresh Basil Leaves.

If quartered the Tomatoes can be place within the circle of sliced Mozzarella giving the plate a nice rustic look. However if sliced the presentation can turn more sophisticated as you can arrange all the slices of Mozzarella and Tomatoes in a bicolor twirl.

The Basil Leaves are there for their flavour, their colour and the decorative element they bring to the Salad. They do not need to be torn, crushed or chopped but just gently picked from their stems and placed in a nice fashion upon the plates and on top of the Tomatoes and Mozzarella.

To finish drizzle the Extra Virgin Olive Oil, the Balzamic Vinegar and then season to your liking.

To finally just serve and enjoy that timeless classic Salad on a Summer day.
