This Beef and Cauliflower Stew is a Winter time number: very comforting.  This Stew is good to use leftover Beef but also to use that Wonder Winter Veg which is the Cauliflower. Hearty it does fill the belly up. It can be served with Yorkshire Puddings or/and Mashed Potatoes.

Ingredients

Beef, 1kg. Diced, can be from different cuts.

Carrots, 4, cut into small chunks.

Chestnut Mushrooms, 12, quartered.

Celery, 3, sliced.

Cauliflower, 2 heads with the florets seperated.

Parsley, a bunch, chopped. Stalks included.

Leeks, 2, sliced.

Bay Leaves, 3.

Garlic Cloves, 2, peeled and crushed.

Black Peppercorns, 2 teaspoons.

Beef Stock, 1.5 l.

Bouquet Garni, 1.

Celery Salt, 1 pinch.
