This is a Summer Quiche, one to take for PicNic made with Red Peppers, Feta Cheese and Spinach. It is a healthy Popeye Quiche. However it is esquisitely lush despite being simple. Served with a Salad, the Quiche makes a perfect Starter or Lunch.

Ingredients

1 Block of Short Crust Pastry. about 350 to 500g.

Or 175g of Flour mixed with 75g of Butter for the Pastry.

Red Sweet Bell Pepper, deseeded, 1.

Roasted Sweet Bell Pepper, either Red or Yellow, from a Jar.

200g of Baby Spinach Leaves.

Veg Stock Cube.

Feta Cheese 250g, grated.

80 of grated Parmesan.

50 to 80g of Breadcrumbs.

Eggs 5.

Milk 100ml.

Double Cream 200ml.

Seasoning, Cracked Black Peppercorns, Sea Salt.

Thyme.

Red Radicchio 1.

Frisée Lettuce 1.

Rocket Leaves, 150g.

Baby Leaves Spinach, 150g.

Cherry Tomatoes, 12 to 24 halved.

French Dressing.

 

 

 

 

Steps

First make the Short Crust Pastry. Let the Butter to be at room Temperature then dice it. Weigh your Flour. Insert your Butter to your Flour and work it either by hands or with a mixer. Cling Film your ball of Pastry and put it in the Fridge for half an hour.

Prepare the filling of the Quiche by breaking the Eggs, adding the Milk and the double Cream. Season well. Add theThyme Leaves then whisk to combine. Let it rest in the Fridge. 

Chop the Red Sweet Bell Pepper and deseed it.

Take a  roasted Sweet Red Pepper from a Jar and chop it. By using a raw  Pepper and a roasted one brings different textures to the Quiche.

Boil the Kettle, pour the hot Water in a measuring Jug, 100ml to 250ml. (it doesn't have to be precise). Add a Veg Stock Cube in the Jug and whisk well.

In a wok, pour the Stock Water and add the Spinach for the Quiche upon a low heat. A dash of grated or ground Nutmeg is optional. Reduce the Spinach right down. Drain and chop the Spinach in little pieces.

Take the Short Crust Pastry out of the Fridge to stretch it on a floured board or area. Pre-heat the oven to gas mark 5. Butter the Pie case thoroughly. Put your Pastry within the case. With a fork prick the base of the Pastry gently to cook it in an aerated way. Then blind cook your Pastry putting a Baking Paper Cartouche and either Rice or dry Beans upon it. Around 20 minutes will part bake the Pie case.

Meanwhile, half all the Cherry Tomatoes. Mix all the Salad Leaves together and add the Cherry Tomatoes Halves. If not shop bought, prepare the French Dressing.

Remove the Pie Case out of the oven. Place the filling in it: The Red Sweet Peppers and the Spinach. Grate the Feta Cheese over . Add the Eggs mix then topped with Breadcrumbs and grated Parmesan. Place the Quiche back in the oven for about 30 to 40 minutes.

Now a Quiche can be eaten either cold or hot. My own taste is to have my Quiches hot or warm. The side for a Quiche is up to anyone. A simple Salad works really well.
