Spring

To be frank, I never met a person who didn't like Spring.There is something about seeing the first flowers, the first leaves of any given year which lift anyone's spirits up. It is like witnessing within our surroundings the old saying that the sun always shines after the storm. Spring brings a renewed spring in our steps, and a smile on our faces. With a new year comes new hopes, the first blossoms of the year seems to always confirm that fact from the humble Crocus to the majestic Magnolia flowers passing by the bright yellow 'Trumpeting' blooms of Daffodils. Then after putting seeds, roots and spuds in the ground comes the first rewards of the year: Herbs, Spring Greens, Rhubarb, New Potatoes, Sorrel, Watercress, Rocket, Asparagus... the list is long and after a long Winter most welcomed. For me, the Easter period marks the true culinary start of Spring in the kitchen. Memories of slowly roasted shoulders of salt marsh Lamb are staying with me as the most delicious centrepiece of my Easter Sundays back in Normandy. Then nowadays a lovely brunch of grilled Asparagus topped by a poached Duck egg reminds me of all the joy of Spring, the time when stepping outside does not feel so cold nor bleak anymore, the time to plan little tea parties in the garden, the time to look forward to the first picnic, and the first Jersey Royal Potatoes... In this section you will find a selection of recipes which I enjoy every Spring along with what veg and fruits are coming into season.
